Steven Vargas comes from a long lineage of pioneering coffee producers, whose farming dates back to the 1940s. This is the third year we have carried Steven's coffee, and we are impressed with the quality of his offerings time and time again. This specific lot of 100% Catuai variety exhibits a smooth and supple mouthfeel, accented by pleasing tartaric notes of clementine and tamarind, followed by a long-lasting white chocolate sweetness.
We roast on Tuesday and Thursday. Your order will be shipped or available for local pick up by Friday.

Apostol is one of the Vargas family’s higher elevation farms in the foothills of the Poas Volcano in Sabanilla de Alajuela in the Central Valley growing region of Costa Rica. The catuai and caturra trees planted here are thriving due to being well taken care of and the excellent environment. Steven’s father, Gilberth, is methodical in his treatment of the plantation - ensuring fantastic nutrition, nearly no use of herbicides and pesticides, as well as constant renovation. The earth, of course, is extremely fertile and made up of volcanic material situated in an environment made for the coffee plants to love. The care of Don Gilberth along with the nurturing of Mother Earth results to a delicious coffee fruit for processing naturally.
Processing Information:
After picking the cherries of only optimum ripeness, Steven brings the coffee to the mill, they put them on raised beds in a layer about 2 inches thick and they are left uncovered for one night. After this they start moving/turning the cherries numerous times a day, and they cover the coffee at night to protect it from rain. It usually takes 15 to 18 days to sun dry.
