In the northwest portion of Tolima, Colombia, sits the 300 hectare farm known as El Vergel Estates. Led by second-generation producers Elias and Shady Bayter and their mother Martha, El Vergel has become known for its innovate approaches to processing and fermentation.
This coffee undergoes a 60-hour anaerobic fermentation in stainless steel tanks followed by sun exposure with intermittent drying sessions over 35 days. The process ends with mechanical finishing touches before a two-month resting period in grain pro storage for optimal maturation.
The result is a cup that is most definitely funky and fun. On the cupping table we were immediately taken aback by its incredibly sweet aroma. When brewed, we’re noting memorable flavors of watermelon candy, bubblegum, and strawberry rhubarb.
