Located between the National Park of Tatama and "serrania de los paraguas" in Colombia, Valle del Cauca lies in a biological Conservation Corridor. After first undergoing a washed processing, this coffee is then decaffeinated through the use of an organic compound derived from sugarcane called ethyl acetate. The end result is a 97% caffeine-free coffee that boasts sugary-sweet tasting notes, and can be enjoyed at any time of day.
The Sugarcane decaffeination process starts with first steaming the coffee to open up its pores. Next, the coffee is placed in a solution of ethyl acetate and water, where over the course of 8 hours the ethyl acetate binds to the caffeine molecules. Once the caffeine has been successfully removed, the coffee is then steamed again to remove any traces of ethyl acetate. Finally, it is dried to reach the same moisture content that it had prior to the process. What's left is a high-quality coffee that has retained the majority of its flavor characteristics, while only keeping about 3% of its original caffeine content.
