Steven Vargas and his family have Central Valley Coffee running through their veins. His great grandfather, Recadero, was a pioneer in establishing coffee in the area of San Isidro de Alajuela along the slopes of the Poas Volcano in 1940. His son Sabino, of whom the mill is named after, continued the family business and even succeeded in growing and developing it. Today, Sabino’s youngest child, Gilbert and his son Steven, operate the farm and were able to create a wet mill 15 years ago in order to process their own coffee. After generations of producing coffee to be exported they are still honored to bring quality and different varieties of coffees to places all over the world. Like those before him, Steven also worked hard and achieved developing the farm even further by impacting an array of coffee professionals throughout the globe with exciting cup profiles. Don Sabino got its start, first by processing washed coffees, after some years they began offering various honeys, and in the past 6 years they have focused 95% of their production on super clean and expressive natural processing. 

The San Juan lot is  located at one of the family’s higher elevation farms in the foothills of the Poas Volcano in Sabanilla de Alajuela in the Central Valley growing region of Costa Rica. The catuai trees planted here are thriving due to being well taken care of and the excellent environment. Steven’s father Gilberth is methodical in his treatment of the plantation - ensuring fantastic nutrition, nearly no use of herbicides and pesticides, as well as constant renovation. The earth, of course, is extremely fertile and made up of volcanic material situated in an environment made for the coffee plants to love. The care of Don Gilberth along with the nurturing of Mother Earth results in a delicious coffee fruit for processing naturally.

After picking the cherries of only optimum ripeness, Steven brings the coffee to the mill, they put them on raised beds in a layer about 2 inches thick and they are left uncovered for one night, after this they start moving/turning the cherries numerous  times a day and they cover the coffee at night to protect it from rain. It usually takes 15 to 18 days to sundry.
